Best Mother’s Day Breakfast Recipe
Mother’s Day is in just one week, and as this time a year approaches, I never know what to get my mom.
Every year, I ask her what she wants, and she always answers with the same thing. She says she wants me to make her something. In the past years, I made cards and picture frames and all sorts of DIY crafts, but this year I wanted to make one of her favorite breakfasts for her. She used to make this recipe for us a lot when we were younger, and it is SO delicious and super easy to make! It is called a Dutch Baby. It is like a pancake but sweeter and fluffier. INGREDIENTS:
2 tablespoons of unsalted butter
3 large eggs, at room temperature
¾ cup of whole milk or almond milk, at room temperature
⅔ cup whole grain flour, such as spelt or whole wheat pastry or ¾ cup all-purpose flour or your favorite GF flour blend
¼ teaspoon of fine sea salt
1 tablespoon of pure maple syrup or sweetener of choice
2 teaspoons of pure vanilla extract
fresh fruit, preserves, butter, powdered sugar (optional)
DIRECTIONS:
Preheat the oven to 425 degrees. Place the butter in a 9-inch skillet or pie plate and transfer the skillet to the oven until the butter is melted. Brush the sides of the skillet with the melted butter.
Add eggs, milk, flour, salt, syrup and vanilla to a blender and process for 1 minute.
Pour batter into the skillet with the melted butter and bake until puffed and set, about 20 minutes.
Serve with desired toppings! (I added berries and powdered sugar.)
