How to Make Healthy-ish Oatmeal Chocolate Chip Cookies

I have been baking a lot during this quarantine because it passes time and rewards me with a delicious treat! I have made a lot of cookies in particular, and one of my favorite kinds of cookies to make and to eat are oatmeal chocolate chip cookies. However, I wanted to make a more healthy alternative to this treat, so there’s no guilt when having one (or two) of these to snack on. So, here is my somewhat healthy, no-guilt alternative to the traditional oatmeal chocolate chip cookie, and they’re equally as good and super fun to make!

What you will need:

1/2 cup (1 stick) plus 6 tablespoons of butter softened

3/4 cup brown sugar

1/2 cup coconut sugar

2 eggs

1 teaspoon vanilla

1 and 1/2 cups spelt flour

1 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon salt

3 cups Quaker Oats

1 cup semisweet chocolate chips

Heat your oven to 350 degrees Fahrenheit. Soften the butter.

Combine the softened butter and sugars in a large bowl, and beat them on medium speed until creamy in an electric mixer.

Next, add in the eggs and vanilla and continue to beat.

Then, add in the spelt flour, baking soda, cinnamon, and salt into the mixture, and mix well. 

Lastly, add your oats and chocolate chips to the mixture, and mix well.

Drop the dough by rounded spoonfuls onto an ungreased cookie sheet. Bake for 8 to 10 minutes, or until the cookies are golden brown.

Let the cookies cool and enjoy!
